2 oz Wild Foraged in WNC

Berkeley's Polypore is the soup stock mushroom.

Add 1-2 oz of mushroom to 2 quarts of water

Add veggie scraps, salt, fat. (optional) 

Bring to a boil, reduce heat and simmer 3-6 hours.


Pour stock through a strainer into another pot. Compost your mushrooms. 

There's your tasty umami mushroom stock. Enjoy!
